Cucumber Curry Salad

Cucumbers are a valuable source of antioxidants and may have cancer prevention benefits. They are also in season in the summer and grow into many shapes, colors, and sizes! They are not all green!
Ingredients:
1 fresh organic cucumber (preferably from your Green Light garden)
Yogurt ( I use organic Bulgarian)
Curry powder
Salt
Olive oil
Instructions:
1. Wash the cucumber and cut it into cubes. Keep the peel! It is rich in vitamin K.
2. In a separate cup mix 3 tablespoons of yogurt with a teaspoon of olive oil and season with a pinch of salt and curry powder to taste.
3. Add everything together and garnish with a mint of lemon balm leaf.
