Lemon Grass
Both the stalks and the foliage of lemon grass can be used for cooking or brewing tea. Lemon grass is also used as a preservative and as a pesticide (repellent).
How to harvest: Find a stalk that is between ¼ – ½ inch thick. Use scissors to cut the stalk at ground level, as close to the roots as you can.
How to prepare: Throw the full stalks into soups, curries, stir fry etc during cooking in order to add lemon flavor- then remove when the dish is ready, in the same style as bay leaves. Boil with water for tea.
