Mint

Mint is a perennial with a ton of culinary and medicinal uses! The familiar, fresh taste of mint is delicious in sauces, salads and dessert.

Throw a few fresh mint leaves into a glass of ice water for a refreshing drink on a hot day! Mint also makes a revitalizing, healing tea, especially healing for sinus infections and colds.

This herb is a digestive remedy, fights fatigue and depression, soothes headaches and has natural weight loss properties. When muddled into a paste, mint is often used as a revitalizing skin treatment.

This easy, in-season recipe for strawberry-mint salad dressing is delicious over some locally grown spinach and arugula!

STRAWBERRY & MINT SALAD DRESSING

1 cup hulled strawberries

1/2 cup balsamic vinegar

1/4 cup mint leaves

4 tbsp olive oil or other oil of choice

2 tbsp sugar, agave, honey or sweetener of choice

salt & pepper to taste

Blend the strawberries and sweetener until pulpy. Add balsamic vinegar, oil and mint leaves. Blend until mint leaves are fully diced. Add salt and pepper and adjust ingredients to your taste preference. Let sit one-two hours to give flavors a chance to fully blend!
